Sometimes you just want a cheeseburger

Those people that say “nothing tastes as good as skinny feels” have never eaten anything. As in nothing. Ever.  At least that is what I’m telling myself because they certainly haven’t tried this dish ;)!  It is one of the most delicious comfort food meals! It was so easy AND you may even be lucky enough to have all the ingredients on hand!  Always an added bonus!

My best friend had been telling me about this Trim Healthy Mama Cheeseburger Pie recipe.  On and on she went about how yummy it was so I decided to try it myself.  It did not disappoint.  Also, it gave me the perfect excuse to use my cast iron skillet again which I hadn’t used since New Years to make cornbread.  Apparently there is a recipe in the THM cookbook, but I used the one in the link referenced above.

Grayson and I could have easily polished off the entire skillet, but we made wiser of that idea and saved some for Monday night leftovers.  Not going to lie, it may have been better as a leftover meal because the flavors had time to blend together!

Hamburger meat sauteed with sweet onion then mixed with eggs, mayo, heavy whipping cream, and cheese in a cast iron skillet then topped with your favorite burger toppings.  I used Claussen dill pickles, apple-wood smoked bacon, and fresh roma tomatoes.  Lastly, it was topped with shredded cheese and baked for about 30 minutes.  I served ours over lettuce and drizzled a little bit of yellow mustard on top for an added yummy cheeseburger element.  This is one of my favorite recipes I’ve made so far!
