I scream, you scream, we all scream for………..CARBS!
I can’t be the only one, can I? I know I’m not. Seriously, another reason why I’m loving the Trim Healthy Mama lifestyle change I’m making is that carbs are NOT the enemy! You heard me right fellow foodies! Carbs are totally ok! No more of the diets that scream “off with their (bread-)heads!”
Monday nights are still hectic for us because we meet with our Life Group. I also have to be at work earlier on Monday’s than any of my other days, so I’m usually running a little late. I didn’t have a chance to throw anything in the crock pot before I left, so all day I was trying to figure out what I would be making for dinner.
I got home and started plundering through the pantry, knowing time was of the essence. I already had some chicken thawing, just hadn’t decided what to do with it. Then I saw them. Peeking at me from behind a bag of onions. Two lone sweet potatoes I had forgotten all about!
Now, you may think I’m crazy, but sweet potatoes seriously help to satisfy my sweet tooth. Especially with a little bit of cinnamon on top! I got to work on them right away, feeling the ticking of the clock urging me to hurry!
I peeled them and chopped them into small cubes. I tossed them with a teeny-tiny bit of coconut oil, light salt, thyme, and a generous amount of cinnamon. Popped them into the oven on 425° for about 35 minutes and voila! A yummy, simple side dish that was ready by the time my chicken was finished grilling AND it abolished my craving! BAM! That’s dinner in a pinch people 🙂 Hope you enjoy them as much as we did!
**side note** I pulled the potatoes out and mixed them up about half-way through baking so each side would be roasted.
